Thumbs up Paleo Recipe - Continental Salad

Continental Salad - Below is the recipe of the salad that I used to have everyday for dinner. This for the benefit of people who wish to start paleo and especially for people who are absolute vegetarians like me.

      Ingredients

      Capsicum (small) - Size - 1/2 - 30 grams / 1.5g carb (0.5g fiber / 1g sugar)
      Carrot - 1 medium - 15 grams / 1g carb (0g fiber / 1g sugar)
      Broccoli * - 28 grams - 2g carb ( 1g fiber / 0g sugar)
      Tomato / red ripe - 28 grams - 1g carb ( 0g fiber / 1g sugar)
      Apple 1/2 small size - 75 grams - 10g carbs ( 2g fiber / 8g sugar)
      Cucumber - 1/2 medium - 100g - 4g carbs (1g fiber / 3g sugar)
      Paneer Raw & chopped - 30g - 2g carbs (0g fiber / 2g sugar)

Chop the above ingredients depending on the shape and size you want. As for the * Broccoli, chop them and heat it for 2 minutes in the microwave before adding it to the salad. As for the sauce, please add the below to make the salad spicy and tasty.

      White Salad Dressing - 5 grams - 1g Carb (0g fiber / 1g sugar)
      French Salad Dressing - 5 grams - 2g Carb (0g fiber / 2g sugar)
      jalapeno - 10 grams - 2g Carb (1g fiber / 1g sugar)

Refrigerate the continental salad for about 60 minutes, served cold but not frozen.

Total ~ 350 grams of Continental Salad / 27g of carbs out of which 5.5g is fiber & 20g sugar.

27g of carbs of natural healthy (almost except for salad dressing) makes a perfect dinner. If you still prefer something nutty, you can choose to add walnuts, almonds and chestnuts. If you still want to go much lower on the carbs, you can choose to remove apple from the above recipe.

Typically such a salad would cost you around 200 - 250 rs @ Soups & Salads for this Quantity (Alwarpet TTK Road). At home, it costs me less than 40 rs.

Calories - Sorry I dont count my calories as they are from natural and healthy source. I am more concern about not hitting the upper limit on the carbs. Please feel free to ask me if you have any questions.

Gump - Eggs contain 1.3 grams of carbs. Look below the nutrition content.

Calories in Egg, Whole, Cooked, Scrambled | Nutrition and Health Facts

6.8g of proteins which is extremely good if you are a egg'terian. 3 eggs per day is good.

Gump- Some days, when the meat supply at home is running low, I end up eating 6 eggs a day. I don't bother with dietary cholesterol. Dietary cholesterol had very little effect on actual blood levels of cholesterol. Which in turn has very little effect on cholesterol in your arterial walls. Enjoy your eggs. MutantX- thanks for taking the effort on paleo recipes. Its something I get a lot of requests on, but am to lazy to do anything about.

Re: Paleo Recipe - Continental Salad

I've been having 6 to 7 eggs a day since April this year. I'm all right so far. The lipid profile I did in October was all right. I'll be doing a lipid profile only in another 10 months or so. I'll be continuing on this same number of eggs, so we'll see if all is fine then.

I wonder you are alive only on this?

One request guys, this is very nice thread so please keep this restricted to share only paleo-recipes and process of preparing the recipes. We have another thread to discuss about Paleo diets so please keep the other discussions going on there only.

PS - MutantX I liked the salad, would try it soon. But my weight is okay, I wonder how it will affect me if I take it regularly

Roadie, my suggestion for lunch is simple.

For people wanting to loose lots of weight, say more than 20% of their present weight, suggest you repeat the above salads with at least 2 eggs.

As for others wanting to loose 10% or less, have red rice with mashed keerai /vegetable sambar / any vegetable except for potatoes.

I have now normalized to a stage where my breakfast is either fruits or nuts. Lunch is either one ghee roast dosa with lots stir fry vegetables or red rice with keerai, sambar or ghee fried vegetables. I have managed to keep my daily carb intake between 80g to 110g which helps me maintain my weight n stay semi paleo. As a vegetarian, I encourage you to start raking eggs.
